When Avocado Toast, a favorite in the US, pirouetted into Paris, it soon took off and began to show up on menus all over the city. Avocados from Spain, Holland, Israel, Morocco and Kenya had been a plentiful staple at markets for years. And with already popular open-faced tartines everywhere plus a wide choice of boulangeries translating to a wide variety of excellent breads, it was just a matter of time. 

Cafés and restaurants rolled up their sleeves to give it their own spin - fresh herbs, seeds and mixed spices here, smoked salmon, a poached egg, crispy bacon, burrata, a sprinkling of pomegranate seeds there.

 Today the very presence of avocado toast on a menu is a plus, suggesting an awareness of healthy eating. And while the Anglo crowd seems to regard it as mostly a breakfast or part of a brunch, many French still see it as a trendy tartine, best as a light lunch. - BPJ

A bagel in Paris

Years ago in Spain I taught myself to make bagels. Quite simply, I missed them. I was living in Barcelona and even though the local panaderías were outstanding, the only thing I could find that resembled a bagel was the sweet ensaïmada from Mallorca, not even close. I'd been making my own breads for awhile, from flatbreads to French boules, and found the entire process - measuring, mixing, kneading, letting the dough rise, baking or, in the case of flatbreads, pan grilling, all the way up to the final result - relaxing and rewarding. And when I came across a bagel recipe lurking among the dog-eared pages of a paperback cookbook in an English-language used-books shop I began to experiment until they were to my liking.
 
 Making bagels from scratch meant I could control their every aspect: size (I prefer smaller), quality/kind of flour and toppings... which changed with every batch depending on what was on hand in my kitchen. To make the bagels I'd get up early, and as the weekend morning edged towards brunch time there would be drop-ins, BYOG (bring your own guitar) music, gurgling pots of coffee, maybe a glass of something and, in cooler weather, a blazing fire - and in no time at all the bagels were ready.
 
They were water bagels - boiled before baking. As soon as they were finished we'd split them open and grill them, open-faced, in the oven, then pile them alongside a huge platter of smoked salmon, flaked smoked whitefish, flavored (home-made) cream cheeses, thinly-sliced tomatoes, red onions, capers, olive oil, lemons and sometimes, sliced avocados. Champagne with a splash of Cointreau, a "French touch" (thank you Ralph), might be the accompaniment. And, to finish, strong Moroccan spiced espresso in elegant demi-tasse cups.

So today, where is my favorite bagel in Paris? As of this posting, and as far as I'm concerned, chez moi. - BPJ

A pancake in Paris





Sometimes the best things in life arrive totally unplanned.

I've never been a great fan of pancakes, the fat American cousin of the French crêpe. 
For me, pancakes were too thick. Too stodgy. In restaurants I'd avoid them and go for the French toast or waffles instead. At university in the U.S. I’d make batches of crêpes for friends, something I learned at home, experimenting with different flours (whole wheat, corn...) and batters (pumpkin, herbs, chocolate, seeds...) and today, I can almost make them with my eyes closed. So when I came across a place in Paris called Pancake Sisters on the internet and mentioned it to an American friend, out of curiosity we decided to give it a try.

But here's what happened: As we stood outside well after what was posted as their opening time waiting for the doors to open, a waiter stuck his head out and with a dismissive, "Tant pis, you'll just have to wait!” he got us to turn our attention to the place next door - where people were streaming in, and it was filling up fast.

And that's how I discovered Holybelly, a brunch restaurant that had been on my might-try list for awhile. It was right there. But as its sister Hardware Socièté, another Melbourne Australian wonder was already in my neighborhood, it was never a priority. It is now. - BPJ

Good starts


All over Paris the traditional French breakfast of coffee, or tea, and a tartine is being pushed aside for more substantial fare.
