Fougasse Friday

 Fougasses or fougaces, large pretzel-like breads made with olive oil with origins in Provence, can be found at many Paris bakeries.

Fougasse Friday


A boulanger works quickly to shape olive fougasses, large pretzel-like flatbreads that originated in Provence. For Good Friday larger ones will have seven holes representing the face of Jesus Christ.
