Biáng Biáng: after the riots, pure comfort in a bowl.
***
Biáng Biáng (also biángbiáng miàn or just biángbiáng), the famous hand-pulled noodles from Shaanxi Province in northwestern China (especially the city of Xi'an), can become so wide they almost need their own arrondissement.
Onomatopoeic, biáng biáng mimics the distinct slapping sound made as the thick, wheat dough gets thrown down and slammed again and again against the chef’s work counter, then pulled into wide, translucent ribbons of kuandai mian - literally "belt noodles." Traditionally topped with scallions, garlic, chili flakes and finished with a lashing of smoking-hot oil, they turn a cold-weather evening into the reason cold-weather evenings exist. - BPJ
